OPG Ipsa with a successful tradition since 1990 has located its native olive groves in Livade, in the heart of Istria. The primary activity of this family farm is olive growing, ie the production of top-quality, award-winning extra virgin olive oil. Olive groves are located on a slope between 190 and 250 meters above sea level, and contain varieties of popular Istrian varieties bjelica, buza, crnica, leccino, frantoio and pendolino. Olives are harvested by hand, grown and processed traditionally, their production is certified organic (without the addition of any pesticides), and the oil is cold pressed. Ipša extra virgin olive oils are produced from the varieties Istarska bjelica, frantoio, leccino, bugla and črnica. Interestingly, all olive oils are stored deep underground in a century-old stone tavern in modern stainless steel tanks connected to nitrogen to preserve the quality and freshness of the olive oils. You can buy and taste olive oils in specialized stores, and in direct agreement with the family farm.
